Burgos, located on the the Rio Arlanzon river, is quaint, quiet and pristine with a hint of excitment and excellent Spanish cuisine. Generally the town is quiet and, after a busy day sightseeing you may like to stroll through one of the parks or sample Burgos' exquisite cuisine. Burgos was the birthplace of Spain's national hereo El Cid, and the town has a perfectly preserved old quarter where Spanish medieval history comes alive.

Burgos consists of the dioceses of Leon, Santo Domingo, and Santander. The history of Burgos is evident when you enter this fantastic town. Once the capital of the Kingdom of Castille and Leon, Burgos began to grow. It prospered greatly from the textile industry and with this wealth came grand churches, monuments and great buildings.
Burgos was founded in 884, and its historical heritage is evident to the visitor. It is a charming, monumental town, with a typical medieval northern Castilian ambience. The gothic cathedral dominates the landscape, but there are many other important monuments such as the Cartuja de Miraflores or the Monastery of Las Huelgas.

The Cartuja de Miraflores is a splendid Baroque monastery (Monastery of Las Huelgas). Large gothic style windows show a little of the wealth that once was. Within the church you will find the cemetary and the mausoleum of king Juan II and his wife Isabel.
While in Burgos it is well worth exploring the many villages of extraordinary historic and artistic value that surround the town.

In the centre Burgos, especially around the cathedral, you will discover a considerable number of bars and tapas bars. Many of them are not open until really late in the evening. The old quarters of La Flora and Las Llanas offer a younger ambience with crowded bars and bustling streets (often open until dawn).

The most famous food of Burgos is certainly fresh cheese with a hint of goat-milk flavour, called Queso de Burgos. It is extremely popular, not only here but in most other regions of Spain. The cuisine of this town has a good reputation also for a variety of other recipes including roast lamb, chopped pork, blood pudding, red beans (called Ibeas) and hotpot. There are excellent fish-dishes as well: river crab salad and codfish a la Burgalesa are specialities of this region.
